Our spirits are produced in small batches with a deliberate focus on Hudson Valley terroir, combining traditional craftsmanship with modern distillation techniques. Each batch begins with fresh, seasonal harvests sourced directly from local farms whenever possible, ensuring a strong connection to the region’s agriculture.

Liquid Mercantile fruit liqueurs are crafted from fresh, locally grown produce to capture the true character of the Hudson Valley.

Depending on the spirit, we distill our mashes using either a traditional direct-fire alembic still or a modern jacketed hybrid still. After the initial distillation, we redistill to isolate the highest-quality ethanol while preserving the most delicate and expressive flavors of the source ingredients. Once the “heart” of the spirit is collected, we reduce the proof slowly and intentionally—sometimes over the course of a full year—allowing the spirit to integrate with water gradually and develop greater depth, texture, and balance.
