Speakeasy Motors, founded by Evan Favaro in 2011, is built on a simple principle: every great project starts with exceptional materials shaped by skilled hands. That same philosophy carries through to our spirits.
Our whiskeys begin with 100% New York–grown grains, distilled with precision and barreled at a lower proof than modern convention. This traditional approach yields a softer, more integrated spirit and allows us to preserve more flavor from the interaction between whiskey and charred American oak. Rather than rushing the process, we let time and wood do the work. After aging, each batch is proofed down slowly over several weeks, never forced—maintaining structure, texture, and depth. Every bottle is then hand-filled and labeled in-house. Our blends are assembled in small batches, carefully curated barrel by barrel to deliver balance and character in every pour.
Straight Rye Whiskey, our flagship spirit, is bold yet approachable—spice-forward with notes of baking spice, caramel, and a rounded sweetness that sets it apart from more aggressive ryes. It’s built for both sipping and versatility behind the bar.
Our Maple Rye Whiskey, finished in used maple syrup barrels, layers rich maple, toasted sugar, and warm oak over the rye’s natural spice. The finishing process adds depth and a subtle sweetness without overwhelming the base spirit, resulting in a complex, dessert-leaning whiskey that remains balanced and drinkable.
This whiskey is aged using a modified solera system, where each new batch is blended with progressively older whiskey held in the finishing barrel. As younger spirit mingles with the older stock over time, the profile continues to evolve—growing deeper, more integrated, and increasingly complex with every release.
The Double Toast Bourbon is a wheat bourbon finished with both toasted French and American oak, creating a whiskey that leans into texture and aroma. Expect notes of vanilla, soft smoke, cocoa, and deep oak, with a lingering finish that highlights the interplay between the two toast profiles.
